Ingredients

  • 200g cooked and peeled king prawns
  • 3 tbsp mayonnaise
  • 1 tbsp ketchup
  • 1 tsp lemon juice
  • Dash of Worcestershire-style sauce (halal certified)
  • 1/2 iceberg lettuce, shredded
  • Paprika, to serve
  • Lemon wedges, to serve

    If your prawns have come straight from the fridge, pat them dry gently with kitchen paper first, excess moisture will water down the sauce once mixed together.

    In a bowl, mix the mayonnaise, ketchup, lemon juice and Worcestershire-style sauce together until fully combined and evenly pink in colour, taste a small amount at this stage, the balance between creamy, sweet and tangy is really what makes this dish, adjust with a touch more lemon juice or ketchup if needed.

    Add the cooked prawns to the sauce and stir gently to coat every piece, being careful not to overmix or the prawns can break apart, especially if they're on the smaller side.

    Divide the shredded lettuce between two serving glasses or small bowls, pressing it down gently so it forms a solid base.

    Spoon the prawns and sauce generously on top of the lettuce in each glass.

    Dust with a little paprika for colour, this is a classic finishing touch rather than adding much flavour, and serve with lemon wedges on the side.
