Iced Peach Tea
A light, fruity iced tea with real peach, refreshing and easy to make in a big batch.

Ingredients
For 2 servings
- 2 black tea bags
- 300ml boiling water
- 1 ripe peach, chopped (or 100g tinned peaches, drained)
- 2 tbsp honey
- Ice cubes, to serve
- Fresh mint, to serve (optional)

Place the tea bags in a heatproof jug and pour over the boiling water. Leave to steep for 5 minutes, any longer and the tea can turn bitter, so keep an eye on the time. Remove the tea bags, gently squeezing them against the side of the jug to release the last of their flavour before discarding.

While the tea is still warm, stir in the honey until it fully dissolves, honey dissolves far more easily in warm liquid than cold, which is why this step comes before chilling.

Leave the tea to cool slightly for a few minutes so it's not piping hot, then blend it together with the chopped peach using a stick blender or a countertop blender, blending until smooth with no large peach chunks remaining, this gives the tea a proper fruity body rather than just a hint of flavour.

Chill the mixture in the fridge for at least 30 minutes, or longer if you have time, the flavour improves the longer it sits.

Fill two glasses generously with ice cubes and pour the chilled peach tea over the top.

Garnish with fresh mint, if using, and serve immediately while cold.
