Homemade Hummus with Warm Pitta

Ingredients

For 2 servings

  • Tin chickpeas, drained200 g
  • Tahini2 tbsp
  • Lemon juice1 tbsp
  • Garlic clove, crushed1
  • Olive oil (plus extra to serve)2 tbsp
  • Cold water2 to 3 tbsp
  • Saltto taste
  • Pitta breads2
  • Paprika, to serve

    Put the chickpeas, tahini, lemon juice and garlic in a food processor or blender.

    Blend until fairly smooth, scraping down the sides as needed.

    With the motor running, drizzle in the olive oil, then add the water a tablespoon at a time until you reach a smooth, creamy consistency.

    Season with salt to taste and blend briefly again to combine.

    Warm the pitta breads in a dry pan or under the grill for 1 to 2 minutes on each side, until soft and slightly puffed.

    Spoon the hummus into a bowl, drizzle with a little extra olive oil, and dust with paprika. Serve with the warm pitta, cut into strips.
