No-Bake Energy Balls

Ingredients

For 2 servings

  • Pitted dates100 g
  • Rolled oats80 g
  • Peanut butter2 tbsp
  • Honey1 tbsp
  • Cocoa powder1 tbsp
  • Saltpinch
  • Desiccated coconut, for rolling (optional)2 tbsp

Method

    Put the dates in a food processor and blend until they form a sticky paste. If they are quite dry, soak them in warm water for 10 minutes first and drain well.

    Add the oats, peanut butter, honey, cocoa powder and salt to the processor. Blend until the mixture comes together and sticks when pressed between your fingers.

    Take small handfuls of the mixture and roll into balls, about the size of a walnut.

    If using, roll each ball in the desiccated coconut until coated.

    Chill in the fridge for at least 20 minutes to firm up before eating. Store in an airtight container in the fridge for up to a week.
