Ingredients

  • salmon fillets2
  • lemon juice1 tbsp
  • salt1/2 tsp
  • black pepper1/4 tsp
  • olive oil1 tbsp
  • sour cream1/2 cup
  • garlic cloves, minced1
  • fresh dill, finely chopped1 tbsp
  • lemon juice1/2 tbsp

    Pat the salmon fillets dry with kitchen paper, then place them in a shallow bowl or on a plate.

    Season the salmon with lemon juice, salt and black pepper. Leave to rest for 10–15 minutes while you prepare the sauce.

    In a small bowl, mix the sour cream, minced garlic, chopped dill and lemon juice until smooth. Taste and adjust with a little extra salt, pepper or lemon juice if needed.

    Heat the olive oil in a large frying pan over a medium-high heat.

    Place the salmon fillets in the pan, skin-side down if they have skin. Cook for 4–5 minutes without moving them too much, until the underside is golden and crisp.

    Carefully turn the salmon over and cook for another 3–4 minutes, or until the salmon is cooked through and flakes easily with a fork.

    Remove the salmon from the pan and let it rest for 1–2 minutes.
