Chinese-Style Sweet and Sour Chicken
Crispy chicken pieces coated in a glossy, tangy sweet and sour sauce with peppers and pineapple.

Ingredients
For 2 servings
- Chicken breasts, cut into chunks2
- Cornflour3 tbsp
- Vegetable oil3 tbsp
- Red pepper, chunked1/2
- Green pepper, chunked1/2
- Tinned pineapple chunks, drained100 g
- Rice vinegar2 tbsp
- Ketchup2 tbsp
- Soy sauce1 tbsp
- Brown sugar2 tbsp
- Water2 tbsp

Toss the chicken pieces in the cornflour until lightly coated on all sides.

Heat the oil in a large frying pan or wok over medium high heat. Add the chicken and cook for 6 to 7 minutes, turning occasionally, until golden and cooked through with no pink in the middle. Remove and set aside on a plate.

Add the peppers to the same pan and stir fry for 3 to 4 minutes until just tender but still crisp.

In a small bowl, mix the rice vinegar, ketchup, soy sauce, brown sugar and water.

Return the chicken to the pan along with the pineapple chunks. Pour over the sauce and toss everything together for 2 to 3 minutes until the sauce thickens slightly and coats everything evenly.
