Turkey Meatballs in Tomato Sauce
Light, tender turkey meatballs simmered in a rich tomato sauce, a lighter twist on a family favourite.

Ingredients

- turkey mince250 g
- breadcrumbs30 g
- small egg1
- garlic clove, crushed1
- fresh parsley, chopped1 tbsp
- Salt and pepper, to taste
- olive oil1 tbsp
- onion, finely chopped1/2
- garlic clove, crushed (for the sauce)1
- tin chopped tomatoes400 g
- dried oregano1 tsp
- spaghetti, to serve200 g

In a large bowl, mix the turkey mince, breadcrumbs, egg, garlic, parsley, salt and pepper until just combined, do not overwork the mixture or the meatballs will turn out tough.

Shape the mixture into small balls, about the size of a golf ball. You should get around 10 to 12 meatballs.

Heat the olive oil in a large pan over medium heat. Add the meatballs and cook for 5 to 6 minutes, turning occasionally, until browned on all sides. They do not need to be fully cooked through yet, they will finish cooking in the sauce. Remove and set aside on a plate.

In the same pan, add the chopped onion and cook for 5 minutes until softened.

Add the garlic and cook for 30 seconds until fragrant.

Add the chopped tomatoes and oregano. Stir well and bring to a simmer.

Return the meatballs to the pan, cover, and simmer for 15 to 18 minutes, turning occasionally, until the meatballs are cooked through with no pink in the middle and the sauce has thickened.

Meanwhile, cook the spaghetti according to the packet instructions in salted boiling water. Drain and serve with the meatballs and sauce spooned over the top.
