Greek Chicken Souvlaki with Tzatziki
Grilled marinated chicken skewers with a cool, garlicky yoghurt dip, simple and full of flavour.

Ingredients
For 2 servings
- chicken breasts, cut into chunks2
- olive oil2 tbsp
- Juice of 1/2 lemon
- garlic clove, crushed1
- dried oregano1 tsp
- Salt and pepper, to taste
- natural yoghurt100 g
- cucumber, grated1/4
- garlic clove, crushed (for the tzatziki)1/2
- fresh dill or mint, chopped1 tsp

In a bowl, mix the chicken with the olive oil, lemon juice, garlic, oregano, salt and pepper. Cover and leave to marinate for at least 20 minutes.

If using wooden skewers, soak them in water for 10 minutes to stop them burning.

Thread the marinated chicken onto skewers.

Heat a griddle pan or frying pan over medium-high heat. Cook the skewers for 4 to 5 minutes on each side, turning occasionally, until golden and cooked through with no pink in the middle.

While the chicken cooks, grate the cucumber and squeeze out the excess liquid using your hands or a clean tea towel, this keeps the tzatziki thick rather than watery.

Mix the grated cucumber with the yoghurt, remaining garlic and dill or mint in a small bowl.

Serve the skewers hot with the tzatziki alongside, plus flatbread or a simple salad if you like.
