Baked Fish Tacos
Flaky spiced fish in soft tacos with a crunchy slaw and a zesty sauce, lighter than the fried version but just as good.

Ingredients
For 2 servings
- white fish fillets (cod or haddock)2
- ground cumin1 tsp
- smoked paprika1/2 tsp
- Salt and pepper, to taste
- olive oil1 tbsp
- red cabbage, finely shredded100 g
- mayonnaise1 tbsp
- lime juice1 tsp
- small tortillas4
- Fresh coriander, to serve

Preheat the oven to 200°C (fan 180°C) and line a baking tray with baking paper.

Season the fish fillets with the cumin, smoked paprika, salt and pepper, then drizzle with the olive oil.

Place on the tray and bake for 12 to 15 minutes, until the fish is opaque and flakes easily with a fork.

While the fish bakes, mix the shredded red cabbage with the mayonnaise and lime juice in a bowl to make a quick slaw.

Warm the tortillas briefly in a dry pan or microwave.

Break the baked fish into large flakes.

Fill each tortilla with the slaw and flaked fish, scattering with fresh coriander before serving.
