Baked Salmon with Asparagus
An easy one-tray dinner of salmon and asparagus with a lemon butter finish, minimal effort but feels special.

Ingredients

- salmon fillets2
- asparagus, trimmed1 bunch
- olive oil2 tbsp
- Salt and pepper, to taste
- butter20 g
- garlic clove, crushed1
- Zest and juice of 1/2 lemon

Preheat the oven to 200°C (fan 180°C) and line a baking tray with baking paper.

Place the salmon fillets and asparagus on the tray. Drizzle with the olive oil and season with salt and pepper.

Bake for 12 to 15 minutes, until the salmon is cooked through and flakes easily, and the asparagus is tender but still has a little bite.

While the tray bakes, melt the butter in a small pan over low heat. Add the garlic and cook for 30 seconds until fragrant, being careful not to let it burn.

Stir in the lemon zest and juice.

Drizzle the lemon garlic butter over the baked salmon and asparagus just before serving.
