Beef and Broccoli Stir Fry
Tender strips of beef and crisp broccoli in a glossy garlic soy sauce, ready faster than a takeaway.

Ingredients
For 2 servings
- beef sirloin or rump, thinly sliced250 g
- soy sauce2 tbsp
- cornflour1 tsp
- vegetable oil2 tbsp
- broccoli, cut into small florets1 head
- garlic cloves, crushed2
- grated ginger1 tsp
- beef stock100 ml
- honey1 tsp
- sesame oil1/2 tsp
- cooked riceto serve

In a bowl, mix the sliced beef with 1 tablespoon of soy sauce and the cornflour. Leave to sit for 10 minutes, this helps keep the beef tender when cooked.

Heat 1 tablespoon of oil in a large wok or frying pan over high heat.

Add the beef and cook for 2 to 3 minutes, stirring constantly, until just browned. Remove and set aside.

Add the remaining oil to the pan, then the broccoli. Stir fry for 3 to 4 minutes until bright green and slightly softened but still crisp.

Add the garlic and ginger and cook for 30 seconds until fragrant.

Return the beef to the pan. Add the beef stock, remaining soy sauce, honey and sesame oil. Toss everything together for 2 minutes until the sauce thickens slightly and coats the beef and broccoli.
