Ingredients

  • Chicken breast1
  • Olive oil1 tbsp
  • Salt and pepperto taste
  • Romaine lettuce, chopped1
  • Mayonnaise3 tbsp
  • Garlic clove, crushed1/2
  • Dijon mustard1 tsp
  • Lemon juice1 tsp
  • Hard cheese (such as a vegetarian Parmesan-style cheese), grated2 tbsp
  • Slices bread, cubed, for croutons2
  • Olive oil (for croutons)1 tbsp

    Preheat the oven to 200°C (fan 180°C). Toss the cubed bread with 1 tablespoon of olive oil and a pinch of salt, spread on a baking tray, and bake for 8-10 minutes, turning halfway, until golden and crunchy. Set aside to cool.

    Season the chicken breast with salt and pepper. Heat 1 tablespoon of olive oil in a frying pan over medium heat and cook the chicken for 6-7 minutes on each side, until golden and cooked through with no pink in the middle. Rest for a few minutes, then slice.

    While the chicken cooks and rests, make the dressing: in a small bowl, mix the mayonnaise, garlic, Dijon mustard, lemon juice and grated cheese until smooth and creamy.

    Place the chopped lettuce in a large bowl. Add most of the dressing and toss well to coat evenly.

    Top the dressed lettuce with the sliced chicken and croutons. Drizzle over the remaining dressing and scatter with extra grated cheese before serving.
