Chicken Milanese
Crisp, golden breaded chicken cutlets served with a fresh lemony salad, simple but properly satisfying.

Ingredients

- chicken breasts2
- Salt and pepper, to taste
- plain flour3 tbsp
- egg, beaten1
- breadcrumbs75 g
- hard cheese (vegetarian Parmesan-style), finely grated20 g
- olive oil, for frying3 tbsp
- Rocket or mixed salad leaves, to serve
- Lemon wedges, to serve

Place each chicken breast between two sheets of baking paper and gently flatten with a rolling pin or the base of a pan to an even thickness, this helps it cook quickly and evenly.

Season the chicken with salt and pepper. Set up three shallow bowls, one with the flour, one with the beaten egg, and one with the breadcrumbs mixed with the grated cheese.

Coat each chicken piece first in flour, shaking off any excess, then dip in the egg, then press into the breadcrumb mixture until fully coated.

Heat the olive oil in a large frying pan over medium heat. Fry the chicken for 3 to 4 minutes on each side, until golden brown and cooked through with no pink in the middle.

Drain briefly on kitchen paper, then serve topped with a handful of rocket or salad leaves and a squeeze of lemon.
