Chicken Shashlik Skewers

Ingredients

For 2 servings

  • chicken breasts, cut into chunks2
  • natural yoghurt2 tbsp
  • olive oil1 tbsp
  • garlic clove, crushed1
  • smoked paprika1 tsp
  • ground cumin1/2 tsp
  • Salt and pepper, to taste
  • red pepper, chunked1/2
  • onion, chunked1/2

    In a bowl, mix the chicken with the yoghurt, olive oil, garlic, smoked paprika, cumin, salt and pepper. Cover and leave to marinate for at least 20 minutes, or overnight if you have time.

    If using wooden skewers, soak them in water for 10 minutes to stop them burning.

    Thread the marinated chicken onto skewers, alternating with pieces of red pepper and onion.

    Heat a griddle pan or frying pan over medium high heat. Cook the skewers for 4 to 5 minutes on each side, turning occasionally, until the chicken is golden and cooked through with no pink in the middle.

    Serve hot with rice or flatbread.
