Cinnamon French Toast
Golden, custardy French toast with warm cinnamon, a simple way to turn a few slices of bread into a proper weekend breakfast.

Ingredients

- Large eggs2
- Milk100 ml
- Ground cinnamon1/2 tsp
- Vanilla extract1 tsp
- Slices thick white bread (slightly stale bread works best)4
- Butter, for cooking1 tbsp
- Maple syrup, to serve
- Fresh berries, to serve (optional)

In a shallow bowl, whisk together the eggs, milk, cinnamon and vanilla extract until well combined.

Dip each slice of bread into the egg mixture, turning to coat both sides. Let any excess drip off, you want the bread soaked but not falling apart.

Heat the butter in a large frying pan over medium heat until melted and foaming.

Add the soaked bread slices to the pan (cook in batches if they don't all fit) and cook for 2-3 minutes on each side, until golden brown and cooked through in the middle.

Serve hot, drizzled with maple syrup and topped with fresh berries, if using.
