Fudgy Chocolate Brownies
Rich, dense and fudgy brownies with a crackly top, simple enough to make with one bowl.

Ingredients

- butter100 g
- dark chocolate, broken into pieces100 g
- caster sugar150 g
- large eggs2
- vanilla extract1 tsp
- plain flour60 g
- cocoa powder2 tbsp
- saltpinch

Preheat the oven to 180°C (fan 160°C). Grease and line a small square baking tin with baking paper.

Melt the butter and dark chocolate together in a heatproof bowl, either in short bursts in the microwave or over a pan of gently simmering water, stirring until smooth. Leave to cool slightly.

Stir the sugar into the melted chocolate mixture.

Beat in the eggs one at a time, then stir in the vanilla extract.

Sift in the flour, cocoa powder and salt, and fold gently until just combined, taking care not to overmix.

Pour the batter into the prepared tin and smooth the top.

Bake for 22 to 25 minutes, until the top looks set with a slight crack but the middle still has a slight wobble. A skewer should come out with a few moist crumbs, not wet batter.

Leave to cool completely in the tin before slicing into squares.
