Homemade Honey Nut Granola

Ingredients

For 2 servings

  • rolled oats150 g
  • mixed nuts, roughly chopped40 g
  • honey2 tbsp
  • vegetable oil2 tbsp
  • ground cinnamon1/2 tsp
  • saltpinch
  • natural yoghurtto serve
  • fresh berriesto serve

    Preheat the oven to 160°C (fan 140°C) and line a large baking tray with baking paper.

    In a large bowl, mix the oats and chopped nuts together.

    In a small bowl or jug, mix the honey, oil, cinnamon and salt, then pour over the oats and nuts. Stir well until everything is evenly coated.

    Spread the mixture out in a thin, even layer on the baking tray.

    Bake for 18 to 20 minutes, stirring halfway through, until golden brown. Keep an eye on it in the last few minutes as it can go from golden to burnt quickly.

    Remove from the oven and leave to cool completely on the tray. It will crisp up further as it cools.

    Serve with yoghurt and fresh berries. Store any leftover granola in an airtight container.
