Baked Ziti
Pasta baked in a rich tomato sauce with plenty of melted cheese, a simple vegetarian bake that feeds the whole table.

Ingredients
For 2 servings
- ziti or penne pasta200 g
- olive oil1 tbsp
- onion, chopped1/2
- garlic cloves, crushed2
- tin chopped tomatoes400 g
- dried oregano1 tsp
- ricotta100 g
- mozzarella, grated100 g
- hard cheese (vegetarian Parmesan-style), grated20 g
- fresh basilto serve

Preheat the oven to 200°C (fan 180°C).

Bring a large pan of salted water to the boil. Add the pasta and cook according to the packet instructions, but for 2 minutes less than stated, as it will continue cooking in the oven. Drain and set aside.

Heat the olive oil in a pan over medium heat. Add the onion and cook for 5 to 6 minutes until softened.

Add the garlic and cook for 30 seconds until fragrant.

Add the chopped tomatoes and oregano. Simmer for 10 minutes, stirring occasionally, until slightly thickened.

Stir the drained pasta and ricotta into the tomato sauce until well combined.

Transfer to a baking dish. Scatter the mozzarella and hard cheese evenly over the top.

Bake for 18 to 20 minutes, until the cheese is melted and golden with bubbling edges.

Scatter with fresh basil before serving.
