Prawn and Vegetable Stir Fry
Plump prawns and crunchy vegetables tossed in a savoury garlic sauce, on the table in 20 minutes.

Ingredients
For 2 servings
- vegetable oil2 tbsp
- raw king prawns, peeled200 g
- garlic cloves, crushed2
- grated ginger1 tsp
- carrot, julienned1
- red pepper, sliced1/2
- mangetout100 g
- soy sauce2 tbsp
- sesame oil1 tsp
- cooked riceto serve

Heat 1 tablespoon of oil in a large wok or frying pan over high heat.

Add the prawns and cook for 2 to 3 minutes, turning once, until pink and opaque all the way through. Remove and set aside.

Add the remaining oil to the pan, then the garlic and ginger. Stir for 30 seconds until fragrant, keeping it moving so it doesn't catch and burn.

Add the carrot, red pepper and mangetout. Stir fry for 3 to 4 minutes until just tender but still crisp.

Return the prawns to the pan. Add the soy sauce and sesame oil and toss everything together for 1 to 2 minutes until heated through.

Serve immediately over rice.
