Spanish Style Salmon Fillets

- onions3 red onions
- bell peppers3 red bell peppers
- paprika1/2 tsp

- salmon fillets1 pound

Preheat your oven to 200°C (400°F).

On a large baking tray, toss the red onion wedges and red bell pepper strips with 2 tablespoons of olive oil, salt, pepper, and paprika. Spread them in a single layer.

Roast the vegetables for 15 minutes, or until they start to soften.

Carefully add the salmon fillets to the baking tray, nestled amongst the vegetables. Drizzle the salmon with 1 tablespoon of olive oil and season with a pinch of salt and pepper.

Scatter the olives and croutons over the vegetables and around the salmon.

Return the tray to the oven and bake for another 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
