Thai Basil Prawn Stir Fry

Ingredients

For 2 servings

  • vegetable oil2 tbsp
  • garlic cloves, crushed3
  • red chilli, sliced1
  • raw king prawns, peeled200 g
  • soy sauce1 tbsp
  • fish sauce (halal certified, or extra soy sauce)1 tsp
  • brown sugar1 tsp
  • red pepper, sliced1/2
  • A large handful of Thai basil leaves (or regular basil)
  • Cooked rice, to serve

    Heat the oil in a wok or large frying pan over high heat until shimmering. Add the garlic and chilli and stir constantly for 30 seconds - don't step away from the pan.

    Add the prawns and stir fry for 2 to 3 minutes, until they turn pink and opaque all the way through. Overcooked prawns turn rubbery within moments.

    Add the soy sauce, fish sauce and brown sugar, along with the red pepper. Stir fry for 1 to 2 minutes, until the pepper is just starting to soften but still has some bite.

    Take the pan off the heat and stir through the basil leaves - they should wilt slightly from the residual heat.

    Serve immediately over rice.
