Toad in the Hole with Onion Gravy
Halal beef sausages baked in a puffy Yorkshire pudding batter, served with a rich onion gravy, proper British comfort food.

- Worcestershire-style sauce (halal certified)1 tsp

In a bowl, whisk the flour, eggs, milk, salt and pepper together until completely smooth with no lumps, then leave to rest for at least 20 minutes.

Preheat the oven to 220°C (fan 200°C). Pour the oil into a baking dish and place it in the oven for 8 to 10 minutes to get properly hot - the oil should be visibly shimmering.

Carefully remove the hot dish from the oven. Add the sausages, then immediately pour the rested batter around them, and return to the oven straight away.

Bake for 25 to 30 minutes, and resist opening the oven door - a rush of cold air can cause the batter to collapse. It's ready when well risen, deeply golden, and crisp at the edges.

While it bakes, make the gravy: heat a small pan over medium heat with a splash of oil. Add the sliced onion and cook for 10 to 12 minutes until soft and deeply golden.

Stir in the flour and cook for 1 minute, then gradually pour in the beef stock, stirring well. Add the Worcestershire-style sauce and simmer for 5 to 6 minutes until thickened.

Serve the toad in the hole straight from the oven with the onion gravy poured over or served alongside.
