Turkey Burgers with Avocado
Lighter than a beef burger but still juicy and full of flavour, topped with creamy avocado for a filling lunch or dinner.

Ingredients

- turkey mince250 g
- small onion, finely grated1/2
- garlic clove, crushed1
- smoked paprika1/2 tsp
- salt and pepperto taste
- olive oil1 tbsp
- burger buns2
- avocado, sliced1/2
- lettuce and tomatoto serve

In a large bowl, mix the turkey mince, grated onion, garlic, smoked paprika, salt and pepper until just combined, do not overwork the mixture or the burgers will turn out tough.

Divide into 2 equal portions and shape into patties slightly wider than your buns, as they will shrink a little while cooking.

Heat the olive oil in a frying pan over medium heat. Cook the patties for 5 to 6 minutes on each side, until browned and cooked through with no pink in the middle. Turkey mince is leaner than beef, so keep an eye on it to stop it drying out.

Toast the burger buns lightly, if you like.

Build the burgers with lettuce, tomato, the cooked patty and sliced avocado on top.
